Uttar Pradesh, 1975. I was working on a development project turning cow manure into methane gas as an alternative form of energy in village India. Every morning at 6:30 a young boy would appear at the door of my hut carrying a tea service. He would look at me with a big smile - "Your chai, sir!". Some commercial brands are good, but my home brew still evokes the memory and, at least to me, tastes the best.
